  1. Preheat your oven to 375ยบ F and prepare an 8.5" loaf pan with cooking spray.
  2. Combine the flax meal and 2 Tbs of water in a small bowl, set aside for 5 minutes to gel.
  3. In a mixing bowl stir together the mashed bananas, sugar, shredded coconut, coconut oil, and coconut milk.
  4. In a separate mixing bowl whisk together the flour, baking powder and salt.
  5. Stir the flax mixture into the wet ingredients, add the dry mixture and stir until it just comes together.
  6. Spread the batter into the loaf pan and bake for 40-45 minutes, until a tester comes out with just a few crumbs and the top is golden.
  7. Cool in the pan 5 minutes, then transfer to a cooling rack and cool completely.
  8. Slice and serve.
