  1. Preheat your oven to 325ยบ and prepare a large bundt pan with cooking spray and coat it with 2 Tbs of sugar.
  2. *Note if you don't have a large enough pan you can bake it in 2 large or 3 medium sized loaf pans, cooking time will vary slightly, about 3-5 minutes less.
  3. In the bowl of your stand mixer beat the butter and sugar until fluffy, add the egg yolks one at a time, add the lemon oil.
  4. Mix together the flour and baking soda and add it to the egg mixture, alternating with the Greek yogurt and vanilla.
  5. Fold in the whipped egg whites gently and spread the batter into your pan(s).
  6. Bake for 1 hour, or until a tester comes out clean.
  7. Cool in the pan 10 minutes, then invert onto a plate and cool completely.
  8. Slice and serve.
