Caramel Apple Cookie Bars




Yield 12 bars



  1. Preheat your oven to 350 F and line an 8"x8" baking pan with foil, grease well.
  2. In the bowl of your stand mixer cream together the butter and sugars until fluffy.
  3. Beat in the egg and vanilla.
  4. Whisk together the flour, oats, baking soda and salt.
  5. Add the flour mixture to the butter mixture and beat until it just comes together.
  6. Press the cookie dough into the baking pan and bake for 18-20 minutes until golden.
  7. In a microwave safe bowl melt the caramels and milk for 2-3 minutes, stirring after each minute.
  8. Pour half of the caramel sauce evenly over the cookie layer and top with the apple slices.
  9. Sprinkle on the pecans, pretzels and chocolate chips.
  10. Drizzle the remaining caramel sauce evenly over the toppings and return to the oven for 5 minutes.
  11. Cool completely, slice and serve.
