Double Chocolate Pumpkin Waffles
Yield 5 -6 large round waffles
- 1/3 c sugar
- 1/2 c pumpkin purée
- 3/4 c almond milk
- 1 egg, extra large
- 1 1/3 c all purpose flour
- 1/4 c cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- 1/3 c chocolate chips
- In a medium sized mixing bowl stir together the sugar, pumpkin, almond milk and egg; until smooth.
- Add the flour, cocoa, baking soda, baking powder and chocolate chips; stir until it just comes together.
- Spoon the batter onto a hot prepared waffle iron and cook according to desired crispness. Remove carefully and serve warm.
