Streusel Topped Blueberry Oat Bread

Instructions

  1. Preheat your oven to 350º and prepare a large loaf pan or a 8 well mini loaf pan with baking spray, note if making minis - you only need 6 of the wells prepared.
  2. In a large mixing bowl stir together the dry ingredients and set aside.
  3. In a small mixing bowl whisk together the orange juice, water, egg, butter and vanilla.
  4. Add the wet ingredients to the dry and stir until it just comes together, fold in the blueberries and spoon the batter into the prepared baking pan.
  5. In a small mixing bowl combine the crumble topping ingredients and mix with a fork or your fingers until a crumbly sand-like texture is achieved.
  6. Sprinkle the crumble mixture generously over the top of the bread batter and bake.
  7. For a large loaf bake 55-65 minutes, for mini loaves bake for 26-28 minutes – until a tester comes out clean.
  8. Remove carefully from the oven and cool in the pan for 15 minutes, then turn out onto a wire rack and cool completely.
