Now the whole family can enjoy pancakes at the same time with these fluffy, delicious pancake minis.

Pancake Minis




Yield 3 - 3 1/2 dozen mini pancakes (I made 3 medium sized pancakes and then 2 dozen minis)



  1. Preheat your oven to 350º and prepare a 24 cup mini muffin pan with cooking spray.
  2. In a large bowl whisk together the flour, sugar, baking powder, salt and cinnamon.
  3. Add the buttermilk, oil and eggs and mix until a lumpy batter forms, lumps are good.
  4. Spoon 1 Tbs of batter in each well of the muffin pan and bake for 13-15 minutes, until slightly golden and a tester comes out clean.
  5. Remove from the oven cool in the pan 5 minutes and serve warm.


*optional: feel free to add your favorite pancake mix in, bacon, chocolate chips, blueberries, whatever. If you want to really maximize your batter add different toppings to each individual pancake before baking.
