Ingredients
- 1/4 c + 2 Tbs flour
- 3 Tbs brown sugar
- 3 Tbs sugar
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/8 tsp salt
- 1/2 tsp cinnamon
- 1/4 c chocolate chips
- 1/4 c old fashioned oats
- 1/4 c shredded sweetened coconut
- 1/4 c pecans, chopped
- 1 egg yolk
- 3 Tbs coconut oil
- 1 Tbs almond milk
- 1 tsp vanilla
Instructions
- In a large bowl combine the flour, sugar, salt, baking powder, baking soda, salt and cinnamon.
- Stir in the chocolate chips, coconut, pecans, egg yolk, coconut oil, almond milk and vanilla, until the cookie dough starts to come together.
- Refrigerate for 1 hour.
- Preheat your oven to 350º and line a baking sheet with parchment.
- Divide the dough into 12 balls and place 2 inches apart on baking sheet, bake for 11-12 minutes.
- Remove from the oven and cool 5 minutes, serve warm.
